Hinai-Jidori

Hinai-Jidori is a premium local chicken raised in northern Akita Prefecture and is known as one of Japan’s “Three Great Local Chickens,” along with Nagoya Cochin and Satsuma Chicken. Only chickens that meet Akita’s strict certification standards can carry the name “Hinai-Jidori.”

Hinai-Jidori is known for its rich flavor and clean, non-greasy fat. The meat has a firm, satisfying texture, and the more you chew, the more umami spreads through your mouth. Because the chickens are raised slowly over 120 days or more, the meat develops a deep, distinctive taste.

The photo below shows a Hinai-Jidori oyakodon (chicken and egg rice bowl). The combination of soft, silky eggs and flavorful chicken makes it an excellent choice for first-time visitors.

Hinai-Jidori’s hometown is the city of Ōdate, but for travelers, the most convenient place to try it is around Akita Station.
