Inaniwa Udon

Inaniwa Udon is a traditional hand-stretched noodle passed down in the Inaniwa region of southern Akita. The noodles are thin yet firm, with a smooth and silky texture. With a history of over 300 years, it was once served as an official specialty of the Akita domain.

The noodles are made through a unique artisanal process in which the dough is repeatedly rested, kneaded, and stretched by hand. It takes several days to complete, resulting in noodles that look simple yet have a deep flavor and distinctive texture.

The classic way to enjoy them is zaru Inaniwa Udon, where the chilled noodles are dipped into a cold broth. This style brings out their smoothness and elegant texture. Served warm, the noodles offer a gentle flavor and can be enjoyed throughout the year.

Inaniwa Udon is eaten across Akita Prefecture, but for travelers, the most convenient place to try it is around Akita Station, where specialty restaurants serve it year-round.

If you visit Akita, be sure to try authentic Inaniwa Udon and experience its smooth, refined texture.
