Kiritanpo is a traditional dish from Akita made by mashing freshly cooked rice, shaping it around a wooden stick, and grilling it. The outside becomes lightly crisp while the inside stays soft and chewy. Originally, it was used as a portable or preserved food by matagi, the traditional hunters of northern Akita.
The most famous way to enjoy it is kiritanpo hotpot. In this classic local dish, kiritanpo is simmered with Hinai-Jidori chicken broth, maitake mushrooms, burdock root, and seri (Japanese parsley). The flavors are simple yet deeply satisfying—once you taste kiritanpo soaked in rich broth, it’s hard to forget.
Kiritanpo is now eaten throughout Akita Prefecture and is also a common home-cooked dish. Around Akita Station, many restaurants serve it year-round, making it easy for travelers to try.
If you want to enjoy the taste of Akita during your trip, kiritanpo hotpot is highly recommended.
