Nabeyaki Ramen: A Local Specialty in a Clay Pot That Stays Hot Until the Last Bite

When it comes to “B-class gourmet” in Susaki City, Kochi Prefecture, nothing stands out more than Nabeyaki Ramen. This unique dish is simmered in a small earthenware pot and served bubbling hot, just as it is. Unlike ordinary ramen that comes in a bowl, this one is presented in a clay pot, letting you enjoy not only the taste but also the rising steam and sizzling sound.

Born in the years after World War II as a simple yet hearty meal, Nabeyaki Ramen has long been loved by the locals. Its charm lies in its straightforward combination: soy-sauce-based chicken broth, thin straight noodles, and basic toppings such as green onions, a raw egg, and chicken. The flavor is modest yet rich, and thanks to the clay pot, it stays hot until the very last bite. For ramen lovers, it’s an experience not to be missed.

There’s also a special way locals enjoy it. After finishing the noodles, they add a bowl of white rice into the leftover soup—this is what Japanese people call the “zōsui style,” similar to rice porridge. It makes for the perfect finishing touch. In fact, most customers order rice along with their ramen, so don’t hesitate to try it yourself. Just remember: rice is a separate menu item, so be sure to order it together with your ramen.
